What is it
Green jalapeño sweet chilli sauce, spiced with cardamom, pineapple and rice vinegar
Why
Born out of isolation 2020 pineapple vinegar was my first creation and entry into the condiment market. 4 years later after a summer of creativity I wanted to bring back this iconic ingredient as a condiment. Accessible to everyone.
What’s does it go with
Tempura, halloumi, fries, Thai food, poured over cream cheese served up with crisps, pork pie, sausage roll and hummus
What does it taste like
Initially the first feeling is a surprising sweet and sour sensation, the fruity pineapple punches through accentuated by the almost savoury greenness of jalapeño, the heat starts to build then there is a flavour not discernible, not recognised. That’s the cardamon.
What’s the inspiration
In my early years of learning to cook and pair flavours The Thai version of sweet chilli sauce was always my go to condiment. Paired with anything it fit perfect on any meal, I wanted to create an every day sauce that could pair wonderful flavours, from pecorino Romano to a sausage roll, pad Thai to schnitzel this is that condiment that just works
What does Eldur mean?
Eldur is a name of Icelandic origin, meaning 'fire' or 'flame
"In every heart burns a fire, and it is love that turns it into light for others."
This reflects the idea that the ELDUR within us can become a source of warmth and guidance for others when fuelled by love and compassion.
