Thai pork sausage roll, iceberg, mint

Back in the groovy 70s, music, radio, and vinyl were the ultimate hangouts. Most days were spent either listening to tunes or listening to an album based on a movie, usually Star War was my go-to. Vinyl has always been a big part of my life, just like food. They’re both my love languages. To celebrate the launch of Fat Freddy’s new album, I wanted to share my love of vinyl and the special feeling of having a musical glimpse into how the artist wanted us to hear their music. Ingredients:

◦   500g Pork Mince

◦   2 Tablespoons Fish Sauce

◦   1 Tablespoon Ginger (grated)

◦   1 Clove garlic (grated)

◦   1 Leek (chopped and washed)

◦   1 Puff pastry sheet

◦   1 Egg (cracked and whisked)

◦   2 Tablespoons roasted sesame seeds

◦   1 Tbsn chopped coriander

◦   ½ Iceberg Lettuce

◦   Few leaves of fresh Mint

◦   BLAK ELDUR

 

Instructions:

-   Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

-   In a large bowl, combine the pork mince,coriander, fish sauce, grated ginger, grated garlic, and chopped leek.

-   Mix these ingredients thoroughly until they are well incorporated.

-   Roll out the puff pastry on a lightly floured surface until it's thin and even.

-   Spoon the pork mince mixture onto the puff pastry, spreading it evenly.

-   Carefully roll the pastry to encase the pork filling completely.

-   Use the whisked egg to seal the edges of the pastry.

-   Place the roll onto the prepared baking tray.

-   Brush the top with the remaining whisked egg, then sprinkle with roasted sesame seeds.

-   Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and cooked through.

-   While the pastry is baking, wash and chop the iceberg lettuce into quarters.

-   Rinse the fresh mint leaves and set them aside.

-   Once baked, remove the pastry from the oven and allow it to cool slightly before slicing.

-   Serve slices of the pastry roll with iceberg lettuce wedges and fresh mint leaves and a good helping of BLAK ELDUR
