Curried fried chicken, lime mayonnaise, parmesan

2 x chicken breast sliced lengthways into 2cm thick slices

200ml butter milk

150g plain flour

2 tbsn curry powder

1 tbsn garlic powder

1 tbsn onion powder

1 tbsn Chinese chicken powder (as a substitute use 1 tbsn SEA salt)

3 tbsn mayonnaise

1 lime juice and zest

2 TBSN BLAK EMBER

A WEDGE OF LIME

Oil for frying

Method

-   Place the chicken into the buttermilk and leave overnight

-    Mix flour, curry, garlic, onion and chicken powders

-    Heat the oil to 150C

-    Dredge the marinated chicken into the flavoured flour and fry FOR 6 MINUTES TURNING TO GET EVEN COLOUR

-    Mix the lime ZEST, JUICE and mayonnaise

-    Lay out the chicken onto the plate , spoon over the mayonnaise AND BLAK EMBER

-    Finish with FRESHLY grated parmesan AND A WEDGE OF LIME
